Seasonal Recipe: Maple-Plantain Ice Cream Sundays

The sap is flowing. Time for Maple-Plantain Ice Cream Sundays. The Sunday topping is made with sap, straight from the trees, rather than syrup or sugar.Ingredients:

  • 6-8 cups filtered maple sap
  • 1 plantain, chopped
  • A pat of butter
  • Vanilla ice cream

Directions: Bring the sap to a boil in a large saucepan. Lower the heat and simmer until it has reduced down until it there is about 1/3 cup of liquid. This will take 1-2 hours. Watch it carefully as the volume gets low. It will become viscous and frothy. When there is just enough liquid to cover the bottom of the pan, add the butter and the plantain.Cook over high heat, stirring constantly, until the sugar begins to caramelize and the plantains soften (2-5 minutes).Remove from heat.
