The Yodeling Forager: Ripening Mayapples

Mayapple patches are common. The large, white flowers are abundant in May, and the small, unripe fruits are easy to find in the early summer.  But then suddenly, right before it is time to harvest them, they seem to disappear... The plants, the fruits, everything... gone. Sure, they are delicious, if you can manage to get them. But how do you get ripe mayapples?

Most foragers feel lucky if they can find just a few mayapples each year. While they are good by themselves, they are even better in deserts. There is nothing quite like the mouth-watering aroma of mayapple muffins baking. But, finding enough ripe mayapples to bake something seems practically impossible. This video shows how I ripen mayapples at home, so that I have enough to use in a recipe. Try substituting mayapple pulp in any recipe that uses banana, pumpkin, or zucchini.
