Wild violet: flowers and greens make beautiful and delicious salads. Try making a violet infused vinegar. Just fill a jar with flowers, cover with vinegar, close it and let it sit for a couple if weeks. Then strain.    Spruce tips: the evergreen-citrus flavor is wonderful for teas and in cooking.   Spruce tips dry well, and can be used year round. Spruce tea is very refreshing. Spruce also adds a nice flavor to meats, stews, crock pot meals, and pickles.      Thistle: young thistle shoots make a crisp-juicy snack.  Harvest thistle shoots by cutting them near the base. Then gently grasp the base and use a sharp knife to carefully remove the leaves and peel the stalk.   Chickweed: a mild green that can be found in abundance. Chickweed is common in lawns, parks, gardens, and disturbed woodlands. Messy mats of, long trailing stems with small leaves make it easy to identify large patches.
